Not too long ago I drank the last bit of Patron Silver I had and rid my house forever of big house tequila. However, there’s always tequila in my house, so I bought a bottle of really delicious anejo tequila made by a company called Kah. The tequila is delicious and normally I wouldn’t cook with such good liquor, but as I said, that’s all I have and on this rainy rainy Wednesday when I had to convince myself to even cook, I put together a quick chicken marinade with my delicious Kah tequila so that we could grill and be done quickly.
It was a refreshing margarita-like marinade that is perfect for this summer swelter! I was tempted to drink the marinade over ice!
Ingredients
Juice of 2 limes
1/3 cup chopped fresh cilantro
1/3 cup tequila
1/4 cup olive oil
1 Tbsp Cracked Pepper Borsari
*just tried this new version for the first time because I love pepper
2 chicken breasts cut into strips
Directions
Mix all ingredients except the chicken in a bowl. Poke the chicken strips with a fork all around to make it easy for the marinade to penetrate the chicken. Marinate chicken for up to a couple hours. After that, the lime will start to cook the chicken. Put the chicken strips on the grill for a few minutes per side depending on how thin you cut them.
I know there are a bazillion recipes out there like this. But I feel like most of them include honey. I thought about it, but left it out because I thought the anejo would create the same caramelization. And it totally did! I served it with a strawberry and avocado salsa.
