About 3 months ago, I casually Instagramed some chicken nuggets that I made for dinner. Really didn’t think much of it actually. I’ve done this several times, you know, health up a chicken nugget. But to be honest, I neither grew up on nuggets, nor really cared much about them. Any instance I can remember eating them though chicken nuggets were just a vessel for some sort of sauce. Sweet and sour, honey mustard, hot mustard, honey, BBQ sauce…you name it. That is really still the case for me now. However, when I started “breading” my nuggets in coconut, the sauce became less important to me. Anyway, when a friend asked about the nuggets on Instagram, I told her I’d send the recipe. And of course, I forgot! Then she asked again at the gym. Queue proverbial light bulb. So here I am blogging coconut chicken nuggets for you, Courtney! I hope you enjoy them as much as I do! And no need to drown them in sauce!
Ingredients
2 boneless, skinless chicken breasts
2 cup coconut flakes

3 eggs, whisked
Coconut oil spray
S&P
Directions
Pre-heat your oven to 375 degrees. If you have a convection oven, turn that on. Cut chicken into nugget size pieces. We all know what this size means, because we’ve all at least seen a chicken nugget! In a food processor, pulse coconut until the pieces are a bit smaller. Then put whisked eggs in one baking dish and coconut in another. Dredge the chicken pieces in the egg and then pat in the coconut until it sticks well. Spray a 9×13 inch baking sheet with coconut oil then place the “breaded” nuggets on it. Sprinkle with salt & pepper and spray tops with coconut oil. Bake for about 10 minutes until browned on the bottom, then flip and brown on the other side. About 10 minutes.
Pop these babies out and serve. I dipped them in a little honey. But this former post’s sauce works so well with coconut, so if you have time, do this! Apricot Sauce
